The Rack |
|
Here you just have a run of the mill stainless rolling bakers rack. Its price is about 35 bucks. |

|
The foil |
|
I first start by putting 2 layers of foil on the top and bottom racks. |
|
|
|
|
|
|
|
|
|
|
The Sides |
|
The sides are covered in foil whit the seams overlapping about 4 inches. Then the seams are duct taped closed. |

|
|
|
|
The Heat |
|
For heat I use 2 counter top hot plates. You can pick them up from your local hardware store for about 10 bucks each. |

|
|
|
Steel Bowls |
|
I use 4 steel bowls to hold the chips I put on the hot plate. 4 is good so you can have the other set ready while the oters are cooking. But you could get by with 2. |

|
|
|
Cover |
|
Cover the bowls with aluminium. Then poke holes in it so the smoke can come out but bo flames. |

Smoke ON |
|
Just toss the bowl on the hotplate and watch it work. |

The MEAT |
|
This is what this is all about. The nice part about this is you can smoke a whole lot of it. I think I can get 30 pounds of it in here. |

Morfe meat |
|
I think this about 20 pounds. 14 pounds of tri tip and 6 pounds of baby back |

Seal the beast |
|
After your meat is loaded you can seal the front with aluminium foil. When you need to change out the bowl just cut a little hole in the foil and your good to go. |
